Tastes Like Ice Cream Kale

Crushing my new years resolutions for a fit bod, I'm obsessed with vitamin enhanced smoothies. This recipe is a spin on a top-selling recipe by the SunCafe in Los Angeles. "Superstar kale, which is loaded with cancer-fighting antioxidants, oxygen-producing iron, and bone-strengthening vitamin K, makes it as healthy as a bowl of greens, while bananas, cashews, and dates render it as indulgent as dessert." You can freeze your leftovers for later.


  Ingredients:


  • ½ cup filtered water
  • ½ cup raw unsalted cashews, soaked
  • 2 large kale leaves with stalk removed
  • 2 bananas, 1 fresh and 1 frozen
  • ¼ cup chopped dates, soaked
  • ½ ts vanilla extract
  • 2 cups ice cubes (a little less if using frozen bananas)
  • ½ ts minced ginger

  • Directions: 


    First soak the cashews and dates for about 10 minutes in a bowl of water. Then put the cashews, dates and water into your blender and mix. Next add the kale until blended. Then add the bananas  and ice and puree until smooth and creamy. When I tried using 2 frozen bananas it was too hard on my blender to mix everything. Sometimes I add 1 ts of chia seeds into my glass.
